Of the choices presented, I would probably go for BSG, although DS9 has a very special place in my heart. Ok, I'll hop off the fence and side with BSG.
Star Wars. And yes... as awful as episodes 1 thru 3 were, I include them too.
I have all of BSG on DVD, but haven't seen more than about half of the first season... I really have to get through it.
The only ST I can swallow is Wrath of Khan, The Undiscovered Country, and *maybe* The Voygae Home, if I'm in a good mood. FIRST CONTACT wasn't bad either.
For me, I really like the new BSG series. I know its a bit like a soap opera in space, but I like the gritty nature of it. I have not seen the 4th season yet, and I hope to pick up the DVD's very soon. When I was younger I watched the old series, and was ok. Once they reached earth, it was done.
For Star Wars, the first two movies were very good, and then the series goes down hill. The killer teddy bears ruined the third movie. The second series was ok, but it was missing something. The special effects got better throughout the series.
I like Star Trek. Clearly the series with Patrick Stewart are very good. Wrath of Khan was clearly the best of the movies. The rest ranged from average to bad. I really like Star Fleet Battles but that is a different story.
I do love Firefly, but I figured if I included it, I couldn't really omit other great stuff like Space: Above and Beyond, Kolchak The Night Stalker, Doctor Who, Alien Nation, Andromeda, The Sarah Connor Chronicles, or The Starlost. Not to mention the animated shows...

I'd have to go with Trek. For whatever reason, I've never been able to get into the new Galactica. I've seen it, and I "get" it, I just don't like it.
Although if it had been a choice, I would have chosen Babylon 5... ;-)
If we're talking comparing original series, then Star Trek.
If we're talking about sequels vs. reboots, then BSG, hands down.
